the beeves wellington have been constructed and are resting in the freezer for this weekend's dinner party. enjoy them vicariously in their embryonic state:
- mise en place
- mid-assembly (layers of spinach, caramelized onion, beef, portabellos, and more spinach)
- cloaked in puff pastry, unbaked

Last night Julie cooked up a scrap of the tenderloin that hadn't fit into the neat packaging scheme. Talk about melt-in-your-mouth good.
