the good, the bad, and the ugly

I've been in a batting slump of sorts. First there was the Strawberry Tart Debacle. Now, the Passover Dessert Nightmare.

It all started with that Queen Mother's Cake. I followed the recipe exactly, but it burned. I mean, burned. It was so bad that I threw it out. Not even a photo to share.

Then, last night, came Nick Malgieri's Flourless Chocolate Cake. I knew that I had overbeaten the egg whites, that they were, as they say, stiff and dry, but what was I to do? I proceeded and while the result may have tasted fine, I guess, it was hideous and unappealing. and could not be served to guests. Note especially the edges, which stuck to the pan and consequently look like Slick was nibbling at them.

So I spent time last night searching the internet for a new recipe, one that used only 6 eggs, not 7 or 8, as 6 was what I had left. I found a suitable candidate and set to it again this morning. About two-thirds of the way through, I realized that the corn syrup in the glaze isn't quite pesadich, but I figured that after trayf chicken in cream sauce, it didn't matter all that much. It came out rather nicely, I think.

A report on the seder (6 adults, 8 kids...oy!) will follow tomorrow.

i hope you at least get to eat the cakes that didn't turn out (um, and that they taste good...).

I was looking for my recipe for flourless chocolate cake, but could not find it in the mess that is my recipe file. (A box of random ripped magazine pages.)

I knew imediately that I needed to visit Terry's rants and I would find one!

America's Test Kitchen (Cooks Illustrated) did a yummy flourless choc cake this year. The recipe is on their site but you have to register. I have the cook book. As for a messy recipe file, a 3-hole puncher and binder are your friends!

MARY MOTHER OF GOD, I made this cake tonight at your suggestion and it is INSANELY GOOD. I'm still buzzed off licking the glaze spoon. I'm serving it tomorrow, but I wasn't happy with the shape of the sides, so I trimmed it down...the scraps alone were transporting. Of course, it has over a pound of Valrhona chocolate in it, so it has a head start on my baking skills anyway. But LORD this is amazing. Thanks for pointing me to the recipe!

It really is, with a few sprigs of mint on my cheapass cake dome/plate from Crate & Barrel ($9.95!).I have Rose Levy Beranbaum's raspberry sauce for the side, but that may be too much. I overbought the spendy chocolate -- by almost three times what I needed, clearly in a fugue state in NY Cake and Baking Supply -- so I guess I'll have to make another one soon.

Molly, do you have Nick Malgieri's Chocolate book or Perfect Cakes? In one of them is the recipe for Individual Warm Chocolate Cakes with vanilla Sauce. There is no better use for leftover good chocolate. Let me know if you need it.
