cooking for dollars

I am always tempted by contests, sweepstakes, and raffles. I figure that someone has to win, and I am just narcissistic enough to figure that it ought to be me.

Truthfully, I am especially interested by cooking contests. I am fascinated by those women who enter contest after contest, winning kitchen gadgets, new appliances, and Winnebagos.

In yesterday's coupon section was an advertisement for a sandwich recipe contest sponsored by Finlandia cheese. As I am a cheese fan, as there was a coupon for the cheese that I was planning on buying anyway, and as I'd then have the necessary store receipt and proof of purchase, I figured I'd enter.

Here's the recipe...hopefully it's trendy enough without being too scary for the folks in the Flyover...wish me luck...


LIGHT AND HEALTHY TROPICAL TURKEY WRAPS

makes 4

4 10 inch whole wheat wraps
1/4 cup light mayonnaise
2 Tablespoons mango chutney
12 slices turkey
8 slices Finlandia Heavenly Light Swiss Cheese
1 ripe avocado, pitted and thinly sliced
4 Tablespoons chopped fresh cilantro
salt and freshly ground black pepper to taste

Mix mayonnaise and mango chutney in a small dish. Spread evenly over the 4 wraps, stopping slightly before the edges.

Layer each wrap with avocado slices, turkey, and Finlandia cheese. Sprinkle cilantro evenly over each and add salt and pepper to taste.

Fold each wrap by bringing the bottom up and rolling tightly.*


*please note that I did not add "stuff in your pocketbook and sneak into the movie theater."
